Sweet potatoes are an underused ingredient. They are full of vitamins A and C, antioxidants, and most importantly, go great with bacon! Here is my Curried Bacon, Sweet Potato, and Spinach Recipe
Recipe
- 1 Sweet Potato, cut into ¼”-½” cubes
- 3-4 strips Thick Cut Bacon
- 2-3 cups Spinach
- 1 Tbsp Red Curry Powder
Wash and dry the sweet potato and the spinach. Cube the sweet potato into ¼” to ½” pieces. Chop the bacon into ½” pieces. Place the bacon and the cubed sweet potato into a cast iron pan on medium heat. Cook for approximate 15 minutes, stirring every minute to cook evenly. When the bacon is just starting to get crispy, stir in the curry powder. Let cook an additional 3-4 minutes, stirring frequently. Add the spinach and stir it in until it cooks down. Plate and serve.
